Dan Mann began with the Baked Potato and used clean lines to refine it into the Twice Baked. The Twice Baked is thinner in the nose and the tail than the Baked Potato, and the Twice baked has a cleaner and more tapered rail than the Baked Potato, especially noticeable where the top of the rail meets the deck line.
The Twice Baked is simply more of a traditionally outlined surfboard than the Baked Potato,with the speed and grovel of the Baked Potato hidden inside it. Most surfers will find that the Twice Baked is more oriented towards pocket surfing in badwaves, with tigher pivot in turns. But it’s still so fast down the line because of its generous width not common in shortboards, even among other popular grovelers.
Dan Mann prefers the Twice Baked as a quad with stiff fins, ideally fiberglass instead of honeycomb or other composite materials. Though many surfers enjoy Dan’s grovelers with a small center nubster fin, Dan says it’s not necessary in the Twice Baked because of how he refined the V bottom and double concave. When it comes to sizing, Dan suggests riding a Twice Baked at around two more liters than you would ride your standard shortboard. That said, the Twice Baked is not a shape you have to absolutely dial your dimensions on. It’s designed to ride well for all surfers across multiple sizes. For example Dan prefers the 5’5, but sometimes rides a 5’3, and when he’s feeling really lazy, he rides a 5’11
